![]() Cube your two pounds of chuck. Brown the chuck in three tablespoons of cooking oil. Remove the meat and reserve some of the beef stock. Spray the pan with a little pam and add one cup of minced onion and let cook. Add three tablespoons of curry powder and two tablespoons of flour. Mix. Add one quarter of a cup of peanut butter and continue mixing. Add one cup of coconut milk, one cup of water and the reserved beef stock (about a half of a cup). Mix together. Add the beef and put under a low flame cover the pot. Let this cook for approximately two hours. Put in your okra approximately twenty minutes before it is done. Serve with various condiments like grated coconut, peanuts, pineapple slices, mango chutney etc. |
