Reverend Angela Palacious joined Manny on this episode to help him bake one of his favorite recipes. Reverend Palacious is the first female ordained as an Anglican Priest in The Bahamas. She has written numerous articles and has appeared on the radio delivering inspirational messages. She said that this baking adventure was a learning experience for her. We learned from her as well.



Coat a spring-form pan with butter and place in refrigerator. Crush 1 pack of graham crackers into crumbs. Add 2 tbsp of butter to a pan and melt down under a low flame. Add the crumbs to this pan with the melted butter and mix. Add another tbsp of butter to this mixture and mix. Add the crumb mixture to your cooled spring-form pan and coat the bottom and the sides. Put this pan back into the refrigerator. Add 1 & 1/2 lbs. of cream cheese to a mixing bowl followed by one cup of sugar and mix together. Add 2 eggs, 1 tsp. of vanilla and let mix. While this is mixing add a 1/2 cup of heavy whipping cream then at a slow speed add 1 & 1/2 tsp. of cornstarch. Let this all mix together for a while. Add this mixture to the chilled spring-form pan then put this in the oven on a cookie sheet and bake for one hour. For the topping, add 2 tsp. of lemon juice to a cup followed by 2 tbsp of cornstarch and mix together. Add this to a pot followed by 1 pint of blueberries, 1 tbsp of butter and 1/2 cup of sugar. You may have to add about a 1/4 cup of water during this process. Place this covered mixture on the stove, under a low heat. When done add the topping to the cooled cake and then let the topping cool.

1 & 1/2 lb. cream cheese

2 eggs

1 tsp. vanilla

1 cup sugar

1/2 cup heavy whipping cream

2 & 1/2 tsp. corn starch

1/2 cup sugar

2 tbsp corn starch

1 pint blueberries

1 tbsp butter

2 tsp. lemon juice
