Gwen Forbes-Kelly has been involved in theatre for a number of years. She was a member of the Bahama Drama Circle, one of the original members of James Catalyn and Friends, and a member of the Dundas Repertory Company. She has performed in such works as “You Can Lead A Horse To Water”, “Bell, Book and Candle” and “Music of The Bahamas.” She is also an avid gardener and a member of the Bahamas Horticultural Society.



Coat a pan with non-stick cooking spray. Add 2 lbs. of lean ground beef to the pan with a full flame underneath. When the beef has started to brown and the 6 cloves of crushed garlic and combine it with the beef. Add 1 cup of celery, 1 cup of onion, 1 cup of sweet pepper and mix together. Add three tbsp of chili powder and salt to taste. Add two cans of tomatoes with chilies and two cans of red kidney beans and mix together. Add another tbsp of chili powder and stir. Add 2 tsp. of thyme then mix and let simmer for about 20 minutes. Add 3 tbsp of Emeril’s Bayou Blast and stir. Serve with rice or pasta.

2 lbs. lean ground beef
6 cloves garlic
1 cup celery
1 cup onion
1 cup sweet pepper
4 tbsp. chili powder
salt to taste
2 cans tomatoes
2 cans red kidney beans
2 tsp. thyme
2 tbsp emeril's bayou blast
parmesan cheese
