Claudette "Cookie" Allens has one of the most recognizable voices in The Bahamas. She can be heard on numerous commercials and is particularly noted for her Superwash ads with Hope Curry. She is also heard on Radio every weekday morning from 6 - 10 am on 1540 AM in Sister Sara's Kitchen. Cookie is an accomplished actress, having worked in theatre for over thirty-five years. She has won a number of DANSAs for her working in performance and in costuming.



Add two bouillon cubes to twelve ounces of water and boil. Set this aside for later. Add one tablespoon of oil to a pot and let heat. Add one large minced onion to the oil and let it cook a bit. Add two minced carrots followed shortly by a three quarter teaspoon of thyme and a half teaspoon of basil. Stir. Add two cups of potatoes and your twelve ounces of chicken stock made from the bouillon and water. Let cook for a while. Add the can of cream of mushroom soup. Add one can of whole corn (drain the water) followed by one can of cream style corn and let this all cook. Add one cup of half and half and cook until done. For your topping, add to a blender, one can of tomatoes with chili, three tablespoons of sour cream and two tablespoons of hot sauce. Puree this mixture and use it to serve on the top of your soup.

1/2 tsp. basil
2 cups potatoes
12 oz. chicken stock
1 can cream of mushroom soup
1 can whole corn
1 can cream style corn
1 cup half and half
1 can tomatoes with chili
3 tbsp sour cream
2 tbsp hot sauce
