Ruth Thackray has had a distinguished career as a chef. She cooked for royalty in England and Spain before moving to The Bahamas. For a few years she worked at her husbands business, The Thyme Group, and now she manages an apartment complex. We were very happy to have Ruth join us for two episodes.

Heat the Heavy Cream and a Vanilla Pod together. Separate the Eggs. We are going to use the Yolks. Into the Egg Yolks add 3/4 cup of Sugar and mix. Add the Egg and the Sugar mixture to the Heavy Cream. Add a cap full of Vanilla Extract. Cook this mixture at a medium heat. Strain the mixture and mix some more. Pour this mixture into Ramekin Dishes. Let cool for one hour. Cover with cling wrap and refrigerate for eight hours. For the topping, do one of the following: Add 1/4 cup of Water to 1 cup of Sugar and cook until caramelized and pour over top or use a Propane Torch to burn the Sugar that has been coated on top of the Heavy Cream mixture in the ramekin. Add Strawberries and/or Raspberries for decoration.

1 cap full vanilla extract
1/4 cup water
strawberries for decoration
vanilla pod
3/4 cup sugar
1 cup sugar
sugar to cover top of dishes
raspberries for decoration
