Keva's Jewel In The Crown Curry

Dr. Keva Bethel is well known and respected as the former Principal/President of The College of The Bahamas. Some of you may not know that she is also the widow of the E. Clement Bethel, the sister of Bishop Michael Eldon and the mother of Dr. Nicolette Bethel and Edward Bethel. Some people who have seen her on our show have said to her, “I didn’t know you could cook” to which she responds, “Well, I did raise a family, how do you think they got fed?”



Grind 3 tsp. of pickling spice. Chop 5 cloves of garlic, 1 inch of fresh ginger root and a half of a goat pepper. Chop 1 onion, a half of a green pepper and a handful of parsley. Cut one pound of beef into cubes. Turn the flame under a pot to medium and add 2 tbsp of canola oil. Let the pot heat a little and then add to it the garlic mixture followed buy the onion mixture and mix them together. Add a half tsp. of turmeric, the pickling spice, a quarter cup of curry powder, 1 and 1/2 tsp. of salt and stir. Add 2 tbsp of tomato paste then add the beef to this mixture and let cook. Add 12 oz of stewed tomatoes and continue to cook. Serve with white rice.

2 tbsp canola oil
5 cloves of garlic
1 inch of ginger root
half of a small pepper
1 onion
half of a green pepper
a hand full of parsley
1/2 tsp. of turmeric
2 tbsp pickling spice
1/4 cup of curry powder
1 & 1/2 tsp. of salt
2 tbsp of tomato paste
1 lb. of beef
12 oz. of stewed tomatoes
