Winston Saunders is presently the Chairman of the Governments Commission on Culture . He may be best known as the former Chairman of The Dundas Centre for the Performing Arts, where he served for over twenty years or as a Coroners Magistrate, where his cases made headlines almost every week. Winston is also an accomplished playwright, actor and sometimes he plays the Organ at Christ Church Cathedral.

Boil one lobster in a cup of water with 1 tsp. of salt. Slice one scallion and add to the boiling lobster. Add 2 sliced onions and 5 mashed cloves of garlic then cover the pot. Remove the core from 4 green bell peppers and coat them with oil. Once the lobster is cooked remove it from the pan. Add 2 tbsp of butter to the water mixture in the pot and stir. Chop one goat pepper and add that to the mix. Add one chopped yellow bell pepper, 1 tbsp of lemon & pepper seasoning and 1 tbsp of peppercorns. Remove lobster from shell and mince into small pieces. Add those pieces back to the mixture in the pot. Add two sliced tomatoes and the juice of two limes. Pour this lobster mixture into the four bell peppers then put them in the oven for seven minutes at 350 degrees. Serve with white rice.

oil to rub on peppers
2 tbsp butter
1 goat pepper
1 yellow bell pepper
1 tbsp lemon & pepper
1 tbsp peppercorns
2 tomatoes
2 limes
