Dr. Nicolette Bethel joined us as our first guest. Since the time of our taping, and the first airing of her eposode, she has been appointed the Acting Director of Culture in the Ministry of Youth, Sports and Culture. Nico is also a writer and her play Powercut was made into a film by Plantation Pictures Limited in 2001.



Mince the garlic, salt, and cilantro. Mince the bacon separately. Beat the eggs. Add cheese, evaporated milk, oregano and pepper. Sautee the bacon and then add the garlic and cilantro. Mix together. Boil pasta. Lower heat under pan. When pasta is ready, pour eggs into pan, add the pasta to the eggs and mix well. Try to avoid scrambling the eggs. Serve with a garnish of cilantro.
Ingredients

1/4 tsp. salt
4 strips bacon
1 tsp. oregano
3/4 lb. linguine
olive oil to coat the pan
cilantro to garnish
7 cloves garlic
a handful of cilantro
8 oz. parmesan cheese
2 eggs
1/4 cup evaporated milk
1 tsp. ground black pepper
