Saucy Chicken Over Orange Rice

Orange Rice

Add two cups of water and one cup of orange juice to a pot and bring to a boil. Add a quarter cup of grated carrot, one half cup of chopped scallion, one quarter of a green pepper (diced), a half teaspoon of salt, a teaspoon of butter and one and half cups of rice. Stir and place back on the stove.

Saucy Chicken

Add one third of a cup of teriyaki sauce, four teaspoons of corn starch and one cup of orange juice. Whisk together and set aside. Add frozen vegetables to wok and cover them a little water to blanch. Set them aside when done. Cube your chicken. Spray wok with some Pam non-stick cooking spray and bring up the heat. Add half of the chicken to wok and cook until light brown. Then cook the other half. Add all chicken to wok and then the teriyaki sauce to the pan and let cook. To a platter, add the rice, the vegetables and the chicken and serve.
Ingredients

2 cups orange juice

3 cups water

1/4 cup grated carrot

1/2 cup chopped scallion

1/4 green pepper

1/2 tsp. salt

1 tsp. butter

1 & 1/2 cup rice

1/3 cup teriyaki sauce

4 tsp. corn starch

16 oz. bag frozen veg.

1 lb. boneless chicken
