Orange Pudding Souffle

Ruth Thackray has had a distinguished career as a chef. She cooked for royalty in England and Spain before moving to The Bahamas. For a few years she worked at her husband’s business, The Thyme Group, and now she manages an apartment complex. We were very happy to have Ruth join us for two episodes.



Add a 1/4 cup of Water to 1 cup of Sugar to caramelize the Sugar. When brought to a boil add 1 cup of Grand Marnier. Zest an Orange to get 2 tbsp worth of zest and add this to 2 tbsp of Grand Marnier. Segment 8 Oranges and squeeze a wedge of Lemon into the segments. Add the Sugar and Grand Marnier mix to the Orange Segments and refrigerate. Coat the ramekins with Butter and then with Sugar to completely cover the insides. Put the ramekins in the freezer. Add 2 oz. of Butter to a pan and heat the Butter until it bubbles. Add 2 tbsp of Flour and then 7 oz. of Milk. Add 3 oz of Sugar and then the Grand Marnier and Zest mixture. Add four Egg Yolks and mix. Whip four Egg Whites and add the Egg White mixture of the Egg Yolk mixture. Put this mixture into the ramekins and then put them in the oven. Lay out some of the Orange Segments and Grand Marnier mixture on a dish. Put a baked Souffle on the dish and sprinkle with some Powdered Sugar.

1 cup sugar

1/4 cup water

2 tbsp orange zest

2 tbsp grand marnier

8 segmented oranges

1 cup grand marnier

7 oz. milk

powdered sugar

1 tsp. lemon

4 oz. butter

1/2 cup sugar

2 oz butter

2 tbsp flour

3 oz. sugar

4 eggs seperated
