During her time studying in Canada, she worked in various restaurants and while at a restaurant called The Commissary, she wrote a cookbook called "The Commissary Book of Edible Gifts and Party Foods". ![]() Spanakopita Chop two bunches of spring onions. Season two boxes of spinach with one lemon. Chop one medium onion. Turn a pan on to a low heat. Add one tablespoon of oil to the pan. Add the onion followed by a little ground black pepper. Add a pinch of oregano and five cloves of minced garlic. Ring out the juice from the spinach and then add it to the pan. Add the scallions to the pan and let this mixture cook for a shot while (one or two minutes). Remove from pan and transfer to a mixing bowl. Let it cool a little and add some lemon zest. Add one eighth of a teaspoon of nutmeg, an eighth of a teaspoon of cardamom, two tablespoons of dill weed and stir. Add two eggs and fold them in to this mixture. Add sixteen ounces of feta cheese. Mix together. Add some ground black pepper. Moisten the fillo dough with either pam or butter. Add the mixture to the dough to make turnover shaped pastries. Place on a cookie sheet then place into the over for thirty to forty minutes at 350 degrees. Baklava Make a syrup with two cups of sugar, two cups of water, one cinnamon stick, three cloves, the juice of one lemon and some orange zest. Cook and let cool and then add a half of a cup of honey. Let the syrup cool. Take two cups of mixed nuts (almonds and walnuts) and add to that two thirds of a cup of dark brown sugar, a half of teaspoon of ground cloves and a teaspoon of cinnamon. Butter your fillo dough and add a layer of the nut mix. Add another layer of fillo dough and then more nuts, etc. take a sharp knife and score down to the base of the dish. Bake. About eight to ten minutes after it’s done, pout the syrup over the pastry and let it get absorbed. |
